AIP Nachos

    Now for something a little lighter   Lets talk food.  Now that my appetite is back I'm all about eating. One of my favorite meals lately is nachos. It has taken me a while to learn how to make nachos that are AIP compliant but here goes: One serving nachos: Artisan Tropic Cassava Strips, you could also use plantain chips and I think some of the Seite chips may be AIP compliant. For the cheese sauce 1/8 cup cassava flour 1/8 cup nutritional yeast 1 tsp apple cider vinegar 1/2 tsp sea salt 1/2 tsp garlic powder enough water to make a thick paste stir all ingredients in a small bowl Place chips on oven safe pan.  Pour cheese sauce on top.  Cover with whatever meat(s) you want. My favorite is ground beef with homemade taco seasoning.  Pour any remaining cheese on top.  Cook at 400 degrees for 8 minutes.  Remove from the oven and cover with all the vegetables.  I also like to top mine with a little unsweetened coconut yogurt.  Enjoy and let me know below what your favor

Autoimmune PTSD

 "Cast all your anxiety on Him because He cares for you" 1Peter 5:7   Let’s talk about something that I am currently struggling with.   This has really been on my mind lately.   This is a topic that is just now really being discussed in our culture but still not much in the autoimmune community. It is a very real part of life for many people who have struggled with autoimmune disorders.   It’s the topic of autoimmune PTSD (post-traumatic stress disorder).   So much of the time these letters are associated with the military or with those who have been abused and rightly so.   My intentions for writing this is to in no way take away from the seriousness of anyone else dealing with PTSD for whatever the reason.            A little background on PTSD.   PTSD was first recognized in 1678 by Swiss physicians .   It was called “Nostalgia”.     Well that makes it sound cute.   "... but they who wait for the Lord shall renew their strength; they shall mount up with wings like eagles; they shall run and not be weary; they shall walk and not faint."  Isaiah 40:31   A renewal deserved a new blog that I actually started well over a year ago.   It encompasses two of my passions massage and nutrition.  After my world has been turned upside down this past year and a half I want this to be so much more than just massage and nutrition.  I also want to focus on the three aspects of healing: body, mind and spirit.  As I have learned one can't be healed without the other two being healed too.  I am still a work in progress and always will be but I cling to the promise found in Philippians 1:6, " And I am sure this, that he who began a good work in you will bring it to completion at the day of Jesus Christ".     Here is a brief overview of the past year and half.  On June 1st 2015 I woke in pain and with a fever.  I finally ended up in th
